Every signature dish begins with a trip to the local market. We select produce at its peak, then let the ingredients guide the plate. Our chefs walk the stalls early in the morning, choosing only what looks, smells, and feels ready. That direct connection to the land means the menu is never static—it breathes with the seasons and reflects what New Zealand growers are harvesting right now.
We work with small New Zealand growers and suppliers who share our respect for the land. Seasonality drives the menu, so dishes evolve throughout the year. You might find asparagus in spring, stone fruit in summer, and hearty root vegetables as autumn settles in. This approach keeps every visit fresh and gives our kitchen the freedom to experiment while staying rooted in local abundance.

Our chefs treat each ingredient with respect, using techniques that enhance natural flavors rather than mask them. Slow roasting, pickling, and smoking are common techniques in our kitchen, each chosen to bring out the best in a particular vegetable, cut of meat, or piece of fish. The Harvest Platter is our most generous offering—a wooden board piled with seasonal vegetables, artisan cheeses, house-made preserves, and warm bread. Slow-Roasted Lamb
Tender and Flavorful
Our slow-roasted lamb is marinated overnight in rosemary, garlic, and olive oil, then cooked for eight hours until it falls off the bone. The low, steady heat allows the meat to become incredibly tender while the marinade works its way into every fiber. The result is a dish that feels both rustic and refined.
Served with minted peas, roasted root vegetables, and a red wine jus, the lamb is a study in comfort and depth. The jus is made from the pan drippings, reduced slowly with red wine and a touch of stock until it coats the back of a spoon. Lamb is sourced from New Zealand farms, and we let the quality of the meat speak for itself.
Technique note: The eight-hour roast is done at a low temperature, allowing the connective tissue to break down without drying out the meat. The result is a texture that needs only a fork to pull apart.
